8:31 AM EDT on the 23rd of February 2026, 2nd day of the week, got this week's dough ball mixed; I'll be stretching it for ultimate gluten development through out the day. I don't cut it into smaller balls till just before I use it, I can get min a pizza and a fugazza out of 1 ball but lately double the pizza count.
